Pad Kra Pao

Last week I had bought Thai basil so I could put it in my green curry. In hindsight, I should have either put all of it in the curry, or just not bought it at all. Because what that left me with was some basil that was starting to look kinda sad. But that's okay! I can just put it in another stir fry! A bunch of leaves were getting really dark, so I did throw some out, but it still smelled fine, which is the the important part.

I decided to make Pad Kra Pao (Ground pork and basil stir fry) since it looked easy. And it was, but I realized I deviated a lot from the recipe:

  • I added a bell pepper, since I had one that I needed to use up.
  • The recipe called for two shallots, and to me, shallots are just expensive tiny red onions. I didn't even have those, so I just substituted it with half a yellow onion.
  • Holy crap, this called for 7 cloves of garlic! If I had known that, I would have bought more garlic two days ago. I only used 5 cloves because I needed to save some for a different dish.
  • I didn't add the chicken broth/water since it didn't seem necessary.
  • I used Thai basil, not Holy basil. Obviously.

As I was just about done cooking this, I had a realization. I didn't make rice yet! So, there I was, frantically getting rice, washing it, and then putting it in the rice cooker. And then I figured I should cut up a green onion to garnish this dish. I was getting really impatient, and right as the rice cooker clicked to "Warm" I took some rice out.

I don't know if other people's rice cookers function like mine, but you pretty much always have to wait 5 or 10 more minutes after it claims to be done cooking before it's actually done cooking. So the rice was a little on the hard side.

I needed some Thai basil

The other day, I had a sudden craving for some spring rolls.

Okay, those pictures are from July. But that's the last time I made spring rolls for myself! I was totally due for another spring roll meal. I know, it's getting colder out, and spring rolls are totally a summer thing. (Or a...spring...thing I guess)

Anyway, here's the spring roll spread I had a week ago.

Honestly, the ones I made back in July were a lot better. A few things about these spring rolls that I recently made:

  • I used already-cooked shrimp in this because it was on sale, and I bought a whole 3 lb bag of it. The shrimp was pretty meh. Gotta cook it myself next time.
  • This would be so much better if I had pork belly.
  • I added carrots just because I had half a carrot that I didn't know what to do with. I feel like restaurants love putting carrots in their spring roll. I'm not really a fan.
  • I also added mint! I like mint, but I realized that the bag of mint I got from the Asian store was huge and I used a bunch of it in a stir fry (I'll get to that soon) and I still have way too much left over.
  • It was such a pain in the butt to get Thai basil. When I was at the Asian store, there was none sitting out, and I asked the lady who works at the store if they had any and she said "Oh! Yes!" and walked away, and I waited for over ten minutes, and she never came back ): Then I wanted to try to go to the other Asian store a few streets over, but it was Saturday, which means street parking costs money, so I park in the other grocery store lot (for the place right next to the Asian store), and when I get out of my car, the parking lot guard says to me "You're only shopping at Wholey's, right?" so I felt bad and I never stepped foot in that other Asian store. I checked Wholey's though. They don't even sell Italian basil.

I was feeling so exhausted just from being in two grocery stores that I decided to head home, BUT I STILL NEEDED MY BASIL. I drove to the Asian store again the next day just to get it. And with my large amounts of basil and mint, I made some stir fry.

Salmon and green beans

The other day I saw salmon on sale for $5.99/lb. I didn't have salmon on my list of things to cook for the week, but I can't say no to cheap salmon. So I walked to the grocery store and bought two pounds of salmon. That's it. Just salmon.

My aunt makes this great salmon dish with lemon pepper and mayonnaise. I always look forward to eating it when I visit her. It seems so simple to make, but for some reason, every time I try to make it, it doesn't turn out right.

And this time? It's no different. It wasn't great. I don't know, I think I need to watch her make it. I have all the ingredients written down, but how much of everything do I need?!

Also, do you see that salmon? I cooked it UPSIDE DOWN. How the heck did I do that? I didn't even notice it until I took it out of the oven. It was overcooked, but the breadcrumbs weren't browned, and it wasn't seasoned enough, but I think I put too much butter, but I didn't even use salted butter so it was weird...

It's alright. Next time, cook it for like 10 minutes and then broil for a few more minutes. Use more lemon pepper. Use more mayo. Use more chicken granules.

Yeah, 5/5 for the veggies. 2/5 for the salmon, but I'll try the salmon again another time.

Social Distancing: Days 57 - 59

Day 57 (Thursday): At this point we're just trying to clear some random foods out of our fridge. One thing that always works for this is pizza. We've already done "normal" pizza and BBQ chicken pizza, so we decided to have some Hawaiian pizza this time.

Oh, my sister also made some cheesy bread sticks to go along with it. I don't think she was terribly happy with this dish, but it still tasted good. And it made a great breakfast a couple of days later. I love leftover pizza.


Day 58 (Friday): For the first time in three weeks, I finally started to relax at work. I had been working so much that I actually ended the day at 2pm! This meant that I was able to cook dinner again!

We bought a few eggplants when we last went to the Asian store without knowing what we'd do with them. But eggplant is always good in stir-fry, and I haven't had stir-fried eggplant in a while. My sister really likes it with egg, so we used that instead of ground pork. We ate all of it that night! And since we had a lot of that honey garlic pork left, we ate that as well. Delicious.


Day 59 (Saturday): I was so excited to make some pork tacos, but when I took out the piece of pork, it smelled kind of funky and after pondering about it for a while, my sister and I decided it was best to just throw it out.

But obviously I still wanted tacos, so I walked to Aldi and bought a whole other pork butt.

Hey, I really wanted tacos. Pineapple and pork go really well together. I was also going to make some sriracha mayo, but I decided to make it interesting and put sriracha in sour cream instead. I'm never doing that again. It was weird.

The tacos were delicious though.


Social Distancing: Days 36 - 38

Remember how I said I was super busy at work, but I had some breathing room? Yeah, work got super busy again.

Day 36 (Thursday): I had this warm cauliflower salad on my to-make list for a while. And now I always have Tahini stocked so it felt like a good time to make it. I was a little concerned this wasn't going to be enough food for dinner, but we paired it with that pork loin we made the other day.

Yeah, that really dry pork loin. You can even see how dry it is in the picture!

But the salad was delicious. Warm salads are great.


Day 37 (Friday): One of the things I've had sitting in my pantry for waaay too long are canned bamboo shoots. I don't really like bamboo, but my sister really likes it and I don't mind it so much in curry. I had some other veggies that would go well in curry (frozen green beans, carrots) so we decided to make some.

Unfortunately, Aldi was out of chicken thighs when we went, but that's alright. This was still delicious with chicken breast. This was super easy to make and very flavorful, so I'd definitely make it again. And adding limes made it even better!


Day 38 (Saturday): Somehow with all the stay-at-home orders, I still managed to have jam-packed weekends. I had a virtual hangout with my friends during the day, and a virtual hangout with my cousins at night. So I wanted to make something easy for dinner.

I've made this beef and cabbage stir fry a few times in the past, and it's easy and tastes good enough, but I feel like it was lacking something. Maybe it needed more fish sauce and sugar. The sriracha helps though.
